Miguel’s experience spans more than 30 years public schools as Food Service Director in Texas and California. He has developed and implemented innovative strategies for improving children’s health and “Created Total School Nutrition and Wellness Environments”. He joined the Novato Unified School District in 2002 and immediately begin to modified schools menus offering nutritious “Real” food, phasing out highly processed food and most recently, providing culinary nutrition education to over 3500 elementary students per semester. He collaborates with numerous groups consisting of students, parents, teachers, school administrators and local\regional health allied organizations to advance the mission of the program. Miguel is an active member of several National, State, and local organizations focused on educating and improving student’s well being. He also serves on several state and national non-profit Boards as an advisor including the National Farm to School Network, Chef Ann Foundation, Golden Gate Dietetic Internship Program, Extrafood.org and Marin Food Policy Taskforce.
